"Not only do we genetically modify and hybridize the strain of wheat we grow in the US, but we slip it into every product imaginable including oat cereal and soy sauce! Small wonder to many people develop wheat allergies in the country. For some folks it may be they have a true gluten sensitivity, but for many it turns out that a more wholesome variety of wheat like Spelt or Kamut is more easily digested. Weekends at my house mean home made spelt bread, spelt waffles and luscious whole grain minimally sweet desserts."

"Very good product. Good taste, hearty. Great if you're trying to avoid gluten. Cooks up and tastes like a mild whole wheat flour. Breads don't rise as much as a light enriched wheat flour, but the recipie on the bag makes a tasty bread. Due to lack of gluten, breads will be somewhat crumby and brittle, but you'll like it. Mix in a little oat flour for an even milder taste - but you lose a little more of the "rise". Enjoy."
