"Arrowhead does a fine job manufacturing and packaing this product, but I have not found a good use for it yet. It had a somewhat bitter aftertaste and what I can only describe as a "green" taste like biting a fresh twig. Flour was on the gritty side, like a corn meal, and it does not rise. Many other gluten-free options to choose from. Not a big millet-flour fan."

"I buy millet flour for one purpose: to use it in white sauces or thickening. To make a gluten-free, dairy-free sauce I substitute olive oil for the butter, millet flour for the wheat flour, and rice/soy milk for the dairy milk. An EXCELLENT smooth sauce!"

"In the interest of healthier eating, I have been baking most of our bread from scratch. I like to substitute millet flour for some of the white flour in order to increase the nutrition of the finished product.
I find millet flour to be particularly tasty in biscuits. For every two cups of flour used, 1/3 cup may be millet. If you try to add more than this, you may dislike the resulting texture.
Try using it in your homemade cookies too; I'm sure you'll be pleased."

"Millet flour is a great alternative flour when mixed into other things. I've used it mixed with rice flour to make an excellent gluten free spice cake -- everyone wanted some, whether or not they needed it gluten free! I've also used it for pancakes and waffles; I've had great Millet bread, but never made it myself. I think millet would make great cookies, if you could balance it into a workable combination. Millet has a great flavor and Arrowhead, as usual, is a trustworthy source. No complaints here!"
